I didn't take a ton of pictures as I made this recipe. I wasn't planning on sharing it on the blog. But, it just tasted too good not to include. This tastes like REAL bread. Like you're at a nice restaurant and they put fresh bread on the table for dipping in olive oil, it's like THAT bread. You will not know this is a GF bread. It has air pockets, a crusty crust, and some real chew. Anyways, I'm sure I won't be able to wait until the next Bomb Cyclone to make this bread again... so I'll be sure to take some pictures for you then.

We went to Disney World a few years ago. Let me tell you, that place is a racket. But, also let me tell you, it is the most fun and amazing racket EVER. Not only do they anticipate your every need (and charge you for it), but they are also miles ahead of the rest of the hospitality industry when it comes to catering to guests with food allergies or restrictions. Last time we went, we ate at Kona Cafe at The Polynesian and the whole family loved their GF Hawaiian Bread. It was sweet, soft, full of holes, and amazing with a light spread of butter. I've never made gougères before, and to be honest, I'm not sure if I've ever eaten them. I like Brazilian Cheese Rolls and the gougères looked pretty similar. I knew that they were supposed to be quite airy, not a dense hard health food roll. 1/2 a stick of butter, 4 eggs, 1.5 cups cheese... yeah, not a health food roll. But, delicious... I knew they were supposed to be lighter than air and taste fabulous. So, I figured, what the heck, I can make these.

Did you know that my son is 8-years old and he's NEVER had a waffle cone before? To be honest, I don't think he is that broken up about it, but a part of me is annoyed every time we go to an ice cream shop and either have to bring our own tasteless gf wafer cone or opt for a cup. Mind you, he doesn't care... but I do. Soooo, when I got into making ice cream last year, I was lucky enough to get a waffle cone maker for my birthday.

When I first started cooking gluten-free five years ago, I tried a bunch of different pre-made gluten-free flour blends, but I was constantly frustrated by how small the boxes or bags were. SO expensive and SO small. Somehow I discovered my now favorite gluten-free blogger Silvana Nardone. I highly recommend her cookbooks. Her recipes were among the first that taught me that gluten-free baking can taste good, so good that no one will know it's gluten-free. She cooks and bakes both gluten-free and dairy-free. I used her flour blend for a long time, and then, along came Thomas Kellar's Cup4Cup gluten-free flour blend. Like Silvana's flour, it works, but OMG is it expensive!!
